  • Add only milk and eggs to this organic Bauckhof Spelled Pancake Mix and you're almost done. In just a few minutes of preparation, the pancakes are ready to eat. Add a little powdered sugar or cinnamon with sugar and serve in traditional Viennese style with compote, strawberry spread or fruit applesauce. By the way, you have a great choice with mineral water or a soy drink as a vegan version. You can add ground almonds, apples or finely chopped hazelnuts. The mixture is made with spelled flour of the best Demeter quality.

    Viennese pastry with raisins

    Method of preparation :

    Add 150 ml of milk and 2 eggs (or 150 ml of soy milk). Put the eggs in a bowl and beat them briefly. Add the spelled pancake mix and half the milk and mix well. Then add the remaining milk and mix until you get a smooth dough. Melt a little butter or cooking oil in a non-stick pan over medium heat and pour in the batter. When pouring, spread the raisins well in the pan. After 3-5 minutes, when the edge is set, divide the dough that is still liquid on the surface into quarters and turn it over. Continue baking for 2-3 minutes. Then cut them into small pieces and bake for about 1 minute, until they are golden brown.


    For vegan preparation :

    Mix the mixture with 150 ml of soy milk (or 250 ml of soy milk and 2 tablespoons of soy flour) to get a smooth dough. Then proceed as above.


    Serving tip : Sprinkle with powdered sugar or sugar and cinnamon. Serve with compote, strawberry spread, berries or apple-buckthorn puree, apple-banana puree or apple-mango puree as a side dish.


    Variations :

    Sunday version : Add 150 g of ground or peeled almonds to the dough.

    With apples : Add 1 small chopped apple to the dough.

    With nuts : Add 50 g of chopped hazelnuts to the dough.

    Extra vanilla : Add 1 packet of vanilla sugar or 1 pinch of vanilla to the batter.

    Extra fruity : Add 50 g of chopped dates or dried fruit.

    Extra light and airy: Separate the 2 eggs, add the yolks to the dough, mix and fold.
