Recipe for preparing gluten-free pancakes in the Pluharnel style (lactose-free) :

Preparation time: 15-30 minutes

To prepare the pancake batter :

100 g mix of 3 flours from Bjorg

40 g of sugar

a pinch of salt

1 egg

a little vanilla

140 ml herbal soy drink by Bjorg

To prepare the side dish for pancakes :

1 apple

10 g of powdered sugar

a little lemon juice

25 ml of water

vanilla ice cream

Custard cream

a few ml Pommo (or Calvados), Normandy brandy

Method of preparation : Add the flour, sugar and eggs to a bowl. Mix with a wire whisk, then gradually add the vegetable soy drink, a little vanilla and salt. Leave the thus prepared mixture to stand for half an hour to an hour at room temperature. Fry the pancakes. Peel and cut the apples into strips. Mix lemon juice, half a cup of water and powdered sugar in a bowl. The mixed content is poured into a non-stick pan and thickened by reducing the heat. Add the apples and stir regularly until they turn brown. Remove from heat and place a heaping spoonful of browned apples directly on top of the pancake. Add a scoop of vanilla ice cream on top of the apples, then a few ml of Pommo (or Calvados) brandy. Fold the edges of the pancake around the apples and ice cream to form a pouch, which you can hold closed with a food pick or toothpick. Add Custard Cream and serve.
