This organic cinnamon powder from Dragon Superfoods is high quality Ceylon cinnamon with less than 0.004% coumarin content. Cinnamon powder is the finely ground inner bark of the evergreen tree Cinnamomum verum, also known as "Ceylon cinnamon". Compared to the more common Cinnamon Cassia, it has a lighter color, a milder flavor and aroma, and a minimal amount of the substance coumarin (<0.004%), which can be toxic in high doses.
