Recipe for preparing vegetarian skewers with homemade ketchup:
Preparation time: 30-45 minutes
To prepare the skewers:
Vegetarian nuggets
1/4 zucchini cut into pieces
1/4 onion cut into pieces
1/4 small bell pepper cut into pieces
Bjorg 's Organic Extra Virgin Olive Oil
To prepare homemade ketchup :
1/2 can of Bjorg 's Organic Tomato Puree
25 g of soft, seedless Medjul dates
1/2 tablespoon apple cider vinegar
1.5 tablespoons of water
1/4 minced garlic clove
1/4 Bjorg 's Organic Vegetable Bouillon
1/4 pinch of salt
Method of preparation :
1. Follow steps 2-6 to prepare the skewers.
2. Heat the oven to 200°C.
3. Form the skewers by alternately stacking "nuggets", zucchini, onion and/or black pepper.
4. Place the skewers on a tray and lightly brush them with olive oil.
5. Bake for 10 minutes, turning the skewers during cooking.
6. Enjoy them with homemade ketchup and a green salad side dish.
7. Follow steps 8-11 to prepare the ketchup.
8. Add all the ingredients to a small cooking pot, bring to the boil and cook over low heat for about 15 minutes.
9. Allow to cool, then blend in a blender or food processor to obtain a smooth and homogeneous consistency.
10. Taste and adjust the seasoning if necessary. If the mixture is a little too runny, thicken it over low heat for a few minutes. If it is too thick, add a tablespoon of water.
11. Eat the ketchup prepared in this way as a side dish with "nuggets" (keep it in the refrigerator).
